Being a Taco

It’s time to talk about my favorite subject in the whole wide world!  F O O D! And Tacos are in my top ten favorite foods.  Hard shell, soft shell, corn tortilla or a combo.  Now when I am craving tacos it does not include any of those fast food chains we are all familiar with.  Now don’t get me wrong I have been known to enjoy a taco or two from those establishments.  What I am talking about are homemade tacos.

This is my first recipe so bear with me. I made this for lunch in about 5 minutes.  This recipe feeds just one.

  • 1/2 cooked chicken breast cubed
  • 1/4 jalapeno diced
  • 1/4 avocado
  • 1/4 C chopped cilantro
  • 1/2 C shredded cabbage
  • 1 lime wedge
  • 3 corn tortillas
  • 1 garlic clove chopped
  • 1/2 TBS olive oil

In a large frying pan heat the garlic with the olive oil for a few minutes then add your chicken.  Once the chicken is heated through place in a bowl.  Place each tortilla one at a time in the pan about one minute each side.  Once the tortillas are warm build your tacos with the remaining ingredients.  Squeeze the lime over tacos just before you eat them.

Now the one thing about my cooking is I may never make this very same taco recipe again. That’s right.  Next time I might add greek yogurt or mozzarella cheese.  So feel free to make this recipe your own!
